I agree completely that you should brown the meat first.

Also, I think "chili ground" meat cooks better in a crockpot than regular hamburger meat. Sometimes I make half of the meat spicy Italian sausage - nice touch, with a hint of fennel.

Here is a simple recipe that I have used. Remember, beans are a side dish - and must NOT be added to your chili.

2 16 oz cans tomatoes with juice (cut up)
2 lbs. ground beef, browned, drained
1 large onion, chopped
3 celery stalks, diced
1 green pepper, seeded, diced
2 garlic cloves, minced
6 Tablespoons chili powder (toasted - see below)
1 jalepeno pepper, seeded, chopped
1 cup of black coffee

Place chili powder in a dry saute pan and turn the stove on to medium heat. Stir it around for a few minutes until you can smell the difference.

Put all of the ingredients in your crockpot. Set on low for 8-10 hrs, or high 5 hours.

I cook the meat first, then just combine the ingredients in the slow cooker and let it sit for about 3-4 hours on high. I cook the meat first just to make sure that it's all cooked and heated before adding it!

I put the meat in first (prefer ground turkey)
Add the onion and garlic
Then the beans (prefer white kidneys and black eye peas)
And finally the tomatoes
Save adding the spices until about an hour before you serve
First thing in the morning
Cook on low 8 to 10 hours
or cook on high for 5 to 6 hours
Yummy!
