Very good Douglas! That was my answer. But you can also buy a box mix and bake it yourself, but it doesn't taste as good.

Simple Sponge Cake

This has got to be the simplest sponge cake mixture ever!

Flavourings can be added - try orange or lemon cake, chocolate cake, vanilla, caraway, coffee etc. The only limitation with sponge flavours is your imagination!

4 eggs
2 c. sugar
1/2 tsp. salt
2 tsp. vanilla
1/4 c. butter
1 c. boiled milk
2 c. all purpose flour
2 tsp. baking powder

Beat eggs until very light. Beat in sugar, salt, and vanilla. Beat in butter and boiled milk. Sift together flour and baking powder and beat in very quickly. Immediately pour into prepared pan. (Makes two 9 inch layers or 13 x 9 inch oblong.) Bake at 350 degrees for 25-30 minutes or until cake tests done.
