Overwritten means gone forever. You can restore deleted files until they're overwritten. It's nothing to do with Mac or PC. It's just what overwriting means.

It depends on how it was "overwritten". We often say that a new or changed file that has the same name as the original and is saved to the same drive volume will "overwrite" the original. But that just means the original file will have its properties changed to be invisible and its space on the drive will not be protected. If another file is saved to the drive after that, the new file may or may not write over the original file. This is not related to whether the new file has the same name as the original file or even if it is of the same type or size. It is only related to where a large enough "unprotected" space is located on the drive.

Many companies make software designed to "dig up" a deleted or "overwritten" file. An example is Norton Unerase. But there are no guarantees. Your chances are better if little drive writing activity has taken place since the mistake was made.
