try mixing: 2/3 olive oil, salt, pepper with 1/3 balsamic vineagar and a teaspoon of mustard. Whip it up until it is fully mixed. Very tasty and healthy too

You have to define "healthy".
If calories aren't a problem, then anything olive oil based is #1.
If calories are a problem, then you'll get excellent results in many low calorie Italian types like Kraft Zesty Italian or Wishbone Spritzer.

Salsa. It makes a great dressing. Really fresh cold salsa, yummy! Oil and cream dressings are not healthy. A little olive oil is okay, but it still has fat in it.

probably olive oil and lemon.
but u know, you can use any dressing you'd like as long as its not tons and tons. just a light amount would be good. maybe get the fatfree kind.
