My wife and I have long wanted to add more fish to our diet, since it's supposed to be so good for you, but we never know what to do with it or what a good piece looks like.

Anyone have tips on how to select, prepare and cook their favorite fish dish? Links & recipes welcome!

That question has so many variable's.

First things first Fish should never smell fishy. (as silly as it sounds) nor should it be mushy.

I prefer flounder or sole as a general suggestion to people starting to eat fish, it's versatile, mild and can be pretty much be cooked any way you want, fried, baked, broiled, stuffed and baked.

From a health standpoint Salmon is usually at the top of the list as are Tuna. Tuna takes some working up to especially if your squimish as Tuna is best served rare.

When cooking any fish always bear in mind , it's not a steak it will go from raw to way over cooked very very quickly.

Filet of Sole a la Gewurztraminer

This is a quick and easy way to fix filet of sole.

7 tablespoons margarine
2 tablespoons chopped Italian parsley
2 pounds filet of sole
1/3 cup Italian bread crumbs
1 cup Gewurztraminer
4 tablespoons heavy cream
salt and pepper to taste

1. Dot the bottom of a 9x13 inch baking dish with 3 tablespoons of the margarine.
2. Sprinkle 1 tablespoon of the parsley in pan.
3. Lay filet of sole in dish.
4. Layer the remaining parsley and the bread crumbs over the sole.
5. Dot with the remaining butter.
6. Pour the Gewurztraminer over the top and season with salt and pepper.
7. Bake for 15 to 20 minutes in a 350 degree oven.
8. Add cream and serve.

Makes 4 servings.

Fresh Halibut is the best!!! It's expensive but, there is nothing like it. Buy a nice piece and slice it in about 1/2 inch pieces. Bread it in Italian bread crumb seasoning mix and fry it in peanut oil until it is done (just a couple of minutes on both sides. It is wonderful!! Now, for something that isn't half bad -- you can get the Pub House brand of halibut that is battered and be sure it says right on the box "Restaurant Quality" from Costco. It is pretty good and fast to fix.

fish is pretty easy to cook probably one of the fastest meat to cook.......first u want to marinate it in lime a salt with water but not for long because the lime actually cooks the fish but it helps cut some of the rawness out. then u can either fry ur fish if u want or u can steam it depending on the fish i like to steam it, after u have it sit in that water for about lets say 30 mins or less depending on ur taste u rinse it off to get the salt out then u season it with ur favourite herbs and spices, letting it simmer on a low heat, don't put to much water in the pan u want just enough to cover the bottom of the pan so the fish doesn't burn but enough to help the juices of the fish come out, this process should take 30 mins in all, hope my explanation helps

Grilled Salmon steaks. I usually buy the salmon in a sea deli store, guaranteed freshness. I season the salmon bothsides with a lemon pepper rub then put them in a fish grill or on the regular grill is fine.. Next i brush on a sauce consisting of lemon juice, melted butter & a dash of garlic.Let it cook on medium low for about 5-6 minutes then flip over. When the salmon starts to get flakey, it is ready.

first, you have to rub the fish on your left foot and scrub all of the toejam out of inbetween your toes. NEXT, you have to poke the fish until its eyes pop out. then after that you have to lick the fish until your tounge feels like muffins. after that you have to cut it up and eat maliciously attack its guts with your stick of doom. if u dont have a stick of doom, u can buy one at any of your local markets, like Ballmart, *****, and Men Blouse. the final step is to eat it raw only using ur left pinky and nose.
