Because it's so fekkin expensive....
We dont HAVE TO save energy, it's encouraged because the generation and use of it generates carbon emissions, and all the tree huggers say it's ruining the planet.
The truth of the matter is this, the general public's contribution is nothing compared to that of Industry. If the technology was improved it would solve the problem.

There are several things to consider here.
First of all, the energy that is used has to come from somewhere. The majority of the sources in use at this time are based on so-called fossil fuels, which are believed to be of limited supply: only a certain amount was laid down, and once it's gone, it's gone. That includes coal, oil, natural gas and peat. Waste energy today, someday have none to use.
Then, there's the problem of energy dissipation. Any time that you do work, part of the energy expended in doing that work is converted into heat. If there were some limitless source of power--as hydrogen fusion is felt to probably effectively be--its wasteful use will locally increase the temperature, potentially to intolerable levels.
Finally, there's raw sense. Every joule of energy you use costs money. Don't know about your wallet, but mine's hasn't got an infinite supply of cash in it. Save energy, have more cash to spend on other things.

To make energy you have to change one thing into another. In the US it is mostly coal, burned to make steam which runs a turbine to make electricity, and the waste products of carbon dioxide (a greenhouse gas) and particulates. Oil is the same. Nuclear is cleaner in the short run - no CO2 or particulates, but the waste has its own special disposal problems.
Most energy from US power plants cames from something that creates waste & pollution. The wind turbines & solar energy & bioreactors are still but a tiny slice of the energy pie chart.
So, saving energy is more or less equivalent to polluting less.
