Herb Crusted New York Strip Steak Recipe

Ingredients:
4 cloves garlic
8 fresh sage leaves
4 teaspoons fresh thyme leaves
4 teaspoons olive oil
4 teaspoons salt
1 1/2 teaspoon ground black pepper

Directions:

Chop garlic in processor; blend until finely chopped. Add sage, thyme, oil, salt and pepper; process until paste forms.

Pat meat dry with paper towels. Rub meat all over with herb paste. Cover; chill at least 3 hours. (Can be made 1 day ahead. Keep refrigerated.)

Preheat oven to 450F. Place meat on rack in roasting pan. Roast meat 15 minutes.

Reduce oven temperature to 350F. Roast meat until instant-read thermometer inserted into thickest part of meat registers 130F for medium-rare, about 35 minutes (or 140F for medium, about 40 minutes).

Remove from oven; let stand 20 minutes.

Or you can grill it to your liking.

You can vary this to use whatever particular herbs you like or whatever you have. I make a "dry rub" and put it on my steaks for about 45 min to an hour before I grill them. For 2 large NY strips, I'd probably use something like this: 2 or 3 cloves garlic, about one Tbsp of salt, about 1/2 Tbsp fresh ground black pepper, and about 2 Tbsp fresh thyme (reduce this to about 2 tsp if you use dried thyme.) Mix it together in a mortar and pestle or a spice grinder. Pat it all over the steaks and let them sit for a while to develop the flavor. I grill thick steaks (about 2 inches) for about 6 minutes on a side over hot coals.
