that all depends on what kind of cookies you're making and if your making it from scratch or out of the box. out of the box don't put alot, they'll be nasty and greasy, just put enough just to keep em from sticking to the pan and if you're making them from scratch i'm hope you have a recipe but most of the time you can just eyeball it but better say than sorry use the recipe.

Here's a recipe for an example:
Butter Cookies
1 cup butter
3/4 cup sugar
1 egg
1-1/2 teaspoon vanilla
2-1/2 cups flour
Directions:
Preheat oven to 400 degrees.
Cream the butter and sugar. Add egg and vanilla, blending well. Blend in flour. Chill dough for 45 minutes. Roll dough 1/4 inch thick and use cookie cutters to make cookies. Bake on ungreased cookie sheet for 5 minutes. Cool cookie sheet between batches.
