It is not the oil that is important, its the temperature of the oil that you intend to deep fry in. If the oil is not the right temp then your food will absorb oil like a sponge. remember Hot water boils rapidly, hot oil very still and quiet. Careful not to reach the smoking point.

Fried foods are not healthy no matter what you fry them in. However they are quite tasty. Just keep fried foods as an occasional treat, and you should be okay. And deap should be spelled deep

All oils once heated produce trans fats which are very bad for you. If you must deep fry use a canola oil. But only use it once. This goes for all oils, once only. Make deep frying expensive, so why do it.

Crisp and Dry in my experience is the best to deep fry. Don't turn your chipper up to maximum because if the oil burns whatever one it is, it will ruin and food will taste horrible andt ry not to deep fry too mant different things in the same oil eg. sausages one day and fish the next, then chips.

I think if you are thinking of healthy.. you just might have to forgo the notion of deep frying... you must understand what fats are and what happen to them when they are exposed to those high temperatures. Go ahead eat your french fries... but don't even pretend that they are healthy because you used organic potatoes and olive oil....

peanut oil, olive oil is not good for deep frying because it is not ment for high heats and burns or scorches easily. peanut oil also doesn't leave and oily taste like some veggie oils can. we deep fry our turkey every year.
you can also use it for deep frying desserts and not have an odd taste to them like some oils give.
