Easy Tomato Soup
2 med Onions, coarsely chopped
2 tbl Olive oil
1 1/2 lb Potatoes, diced
2 tsp Oregano
1 tsp Basil
2 tsp Parsley
1 tsp Salt
2 tsp Black pepper
28 oz Can tomatoes
7 cup Stock (chicken, beef or veggie)
Heat oil in large soup pot. When hot, saute onion for 5 minutes, take care not to let it brown. Add potatoes and fry for, covered for 3 minutes. Add oregano, basil, parsley, salt & pepper. Cook covered for 2 minutes. Add tomatoes and cook for another 5 minutes. Add the stock, bring to a boil, reduce heat & simmer for 20 minutes, or until the potatoes are tender.
Check seasonings. Let cool, blend till smooth. Reheat before serving, but take care not to let it boil.
Sometimes I brown some ground round an add that.

Tomato Basil Soup INGREDIENTS 4 cups chopped fresh tomatoes 1 slice onion 4 cloves garlic 2 cups chicken broth 2 tablespoons butter 2 tablespoons all-purpose flour 1 teaspoon salt 2 teaspoons white sugar, or to taste 1/2 cup chopped fresh basil DIRECTIONS In a stockpot, over medium heat, combine the tomatoes, onion, garlic, basil and chicken broth. Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors. Remove from heat and run the mixture through a food mill into a large bowl, or pan. Discard any stuff left over in the food mill. In the now empty stockpot, melt the butter over medium heat. Stir in the flour to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.

Yes, the best ones to use are the diced tomatoes in juice not puree, but you can use the one in puree if that's what you have on hand.
Take a medium saucepan add a small amount of olive oil in order to saute up some chopped onions. When transparent add the tomatoes, if they are whole just picked them up one by one and squeeze into the saucepan with your hands, crushing them up. Add a little thyme 1/2 teaspoon and cook for 15 minutes at a low simmer. Before serving add a little half and half cream and a small shot of sherry add salt and pepper to taste. Serve with a crusty french bread. Enjoy!

I suggest seeding and chopping the canned tomatoes in place of the "4 tomatoes" in the recipe.
Creamy Tomato Soup
4 tomatoes - peeled, seeded and diced
4 cups tomato juice
1 cup heavy whipping cream
1/2 cup butter
salt and pepper to taste
Place tomatoes and juice in a stock pot over medium heat. Simmer for 30 minutes. Puree the tomato mixture and return the puree to the stock pot. Place the pot over medium heat, and stir in the heavy cream and butter. Season with salt and pepper. Heat, stirring until the butter is melted. Do not boil.

Yes you can by pureeing the tomatos in either a food processor or blender and adding some kind of liquid like stock or broth. If you can't puree them than mince them really fine and use the juice from the can of tomatoes. If its all you have than it will have to do eh?

no at least i never have, you can however make tomato bisque which is a great system warmer, lol...first take a can of evaporated milk and add to pan, after adding milk to pan, fill can with some water and also put that in pan add a couple pats of butter to milk and salt pepper to taste, let that heat up meanwhile. take your tomatoes and mash them up good, add about a half teaspoon of baking soda to tomatoes.... (should be foamy which is normal) take tomatoes and add to milk and heat completely , enjoy with crackers !!!

yes you can. first put litle oil make your pan hot,put some sliced onions and garlic (if you like.garlick) fried them for 5-10 minute dont give them color just make them soft(medioum heat), blend the tomatos put them in the pan some water salt peper simer it for 30 minutes(low heat) put some herbs like parsley and is ready good luck
