Cook pork chops german style... they are called SCHNITZEL
Get some thin pork steaks
Moisten them with an egg wash
Put on some bread crumbs inmediatle after (progresso italian crums are great)
Fry on a hot pan with plenty of oil
Serve hot.
You can pour sauce on them. Jaeger schnitzel have a mushroom gravy over it. It's scrumptious.
Herb butter is great over the schnitzel too.

Special Pork Chops

Makes: 6 servings
Ingredients:
6 pork chops
2/3 cup brown sugar
1 teaspoon paprika
1 teaspoon sage
1 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/2 tablespoons cold water
Preparation:
Preheat oven to 300 degrees. Place pork chops in a long, shallow pan. Do not stack or overlap. Do not brown chops.
Mix all other ingredients together in a bowl to make a paste. Spread paste over chops evenly.
Bake, uncovered, for 1 hour at 300 degrees. After they have baked 45 minutes, turn chops once. Spoon some of the mixture in the bottom of the pan over each chop and finish baking.

Smothered & Covered Pork Chops:
Wash and season chops with seasoned salt, garlic powder, and pepper.
In a large frying pan, add a small amount of canola oil. When the oil is hot, add chops and let them brown on BOTH sides.
Turn the heat down to low/simmer and add a 1/2 cup of water in the skillet to coat the bottom.
Add some onion slices and sprinkle with a little salt & pepper and put a lid on the skillet.
Let it all simmer for about 15 minutes. The water should be gone from the skillet.
ENJOY!

Well I like schnitzel too but, the real schnitzel is made with veal.
Pork cutlets are good though.
If you have bone-in pork chops de-bone them. Then.....\
Jaeger Schnitzel
6 x pork, cutlets, pounded to 1/4 inch thickness 1 1/2 tbl flour
1 1/2 pch salt
pepper, to taste
1 1/2 tbl butter
3 tbl oil
1 1/2 cup sliced button mushroom
3/16 cup red wine
3/4 cup beef stock
Combine flour, salt, pepper. Dredge cutlets in seasoned flour. In a skillet heat butter and oil. Brown cutlets about 3 minutes on each side. Set aside. Add mushrooms cook for 5 minutes. Deglaze with wine and beef stock.
Or You could dredge them in flour, brown them and add 1 can cream mushroom soup, 3/4 can milk and some sliced onions. Simmer till done.

Just brush lightly with olive oil, season a side with your preferace (I use onion and garlic powder) place in a baking pan seasoned sid down, season other side (I use season salt and mesquite) bake at 350 for about 45 min. if on thin side 30 min should be good.
You can mix up stuffing and place on bottom of pan then place porkchops on top or you could use rice (I usually use rice-a-roni putting all ingredients with a 1/4 cup extra water and just bake it all at once)
Or you could take carrots, tomatoes, celery and onions chop to desired size season chops place on top of veggies in pan and bake.
Or you could season chops and cook on grill besure to spray grill with some pam first.
These are all great ways to have a low grease content on your chops.

I rely on thios--sprinkle them with seasoned salt on both sides...place on a baking pan sprayed with PAM, And bake at 375 for 40 minutes.
At 20 minutes, take the pan out, pour off drippings, and turn chops over.
The tastiest, the cheapest, the easiest!!
OR--brown them lightly, put in a casserole, cover with sauerkraut, and bake covered for 30 minutes at 350.
