Any veggie is good, but particularly any cruciferous is the best, which would be Cauliflower, Broccoli, Cabbage and Brussels Sprouts. The have an anti oxidant which is cancer preventing.
Then we have Carrots, lots Beta-carotene, Tomatoes ( not actually a veggie) full of licopane good for the guys and their prostate. The darker green the veggies the better they are.
But for variety reasons you should eat any veggie they're all good for you in on way or the other.

There is no one veggie that is best for you. In deciding which vegetables you should eat, consider a rainbow. Each veggie has different nutritional benefits. White, orange, red, green yellow---all veggies and the more colorful your selection the better.

I can think of one that isn't. White potatoes have a high glycemic index (too much sugar). But most all others are good. Especially avocado, dark green leafy vegs, others with a lot of color.

if you were reduced to only one vegetable, it would probably have to be spinach. Green leafy veggies are best.

Leafy greens, cruciferous vegetables. Also, orange squashes and carrots.
Tomatoes are very good for you as well but they are technically fruits.
