How long before I can handle my baby finches after they have hatched? Will the mother still take care of them? Should I remove the unhatched eggs?

Leave well alone -------
until the babies are weaned , or you may spook the parents,
into neglecting them,

Leave the nest alone--- the unhatched eggs will do no harm
and if they are broken, the parents will remove them,
from the nest themselves
Here are a few sites with useful information on these lovely little birds ;

No, leave them alone or you will kill them!

Ask petco or petsmart for their advice...and please stop.....you are a huge giant to them....so let MOTHER NATURE alone!
