Yes, God absolutely knew that Adam and Eve would fall into sin. That is why Jesus is called "the Lamb slain from the foundation of the world" (Revelation 13:8). God ordained that His Son would redeem His people before the world was ever created.

If God is all knowing, why does he have to look for Adam and Eve? Genesis 3:8-11

Yes... He knew everything.... Yes he knew that Adam and Eve will eat from the tree.... It wasn't an apple... that's a common mistake...
Genesis 3:6 " And when the woman saw that the tree was good for food, and that it was pleasant to the eyes, and a tree to be desired to make one wise, she took of the fruit thereof, and did eat, and gave also unto her husband with her; and he did eat."

It's not that God knows what we "will" do, for that word designates the future, and for God there is no past, present or future. God exists outside of time, and from His vantage point views the fullness of time simultaneously. Right now (from my perspective) God is seeing me being born, typing on this computer, and dying. He is also seeing my great great grandparents and my great great grandchildren being born. So, it isn't that God knows "in advance" what we "will" do. It's just that He has already seen and is seeing and always will see, from outside of time, everything that every human being who has ever existed or ever will exist has done or will do, inside of time. So, before He created the universe He was already seeing Adam and Eve freely choosing to sin, me freely choosing to sin.

He probably knew, but that is what He gave them a mind for, so they could make a choice, God told them not to touch the fruit of that tree and they disobeyed him. And there has been temptations in this world ever since!

It could have been an experiment he was running to see if mankind would listen to him and wanted to see the results in real linear time? Perhaps he had so much faith in mankind to do the right thing he wasnt focusing his attention to earth @ the time the deed was committed? Who knows!

Yes. He also provided for their redemption but left both the fall and redemption of humankind up to their freewill choice. Otherwise they would have been no more than robots.
