I can't find a really nice digital camera with manual controls anywere!

look at any DSLR (Canon XTi is my choice within DSLR class)...there is plenty of manual and automatic...
or
a superzoom class:
Panasonic Lumix FZ-30 - full automatic...semiautomatic modes ..like aperture priority or speed priority ...or full manual ...

so ..what do you mean by ..."nice camera" ?
