HG's Bake-tastic Butternut Squash Fries
Ingredients:
1/2 butternut squash
Kosher salt
Directions:
Preheat oven to 425 degrees. Peel and de-seed your butternut squash. If you're unfamiliar with handling them, you may have a little trouble at first. They're fairly easy to peel, but you'll need a sharp knife to cut them. Once your orange friend is peeled and seed-free, slice it in half. Then cut it up into french fry shapes. I like to use a crinkle cutter to make authentic looking crinkle cut fries, but they'll work any way you slice 'em. Place on a cookie sheet sprayed with nonstick spray. Cover lightly with kosher salt (regular salt works too, but I prefer kosher). Place tray in your preheated oven and bake for 40 minutes or so, flipping halfway through baking process. Fries are done when they are starting to brown on the edges and get crispy. Serve with ketchup, or however else you enjoy fries or sweet potato fries!

A Swiss veggie bake; 1 1lb bag of mixed veggies(frozen-I use broc-cauli-carrot) 1 whole vidalia onion 1 cup mushrooms 1 can of either cream of mushroom or chix(either work well) 12 oz bag of shredded Swiss cheese 1/2 cup of Parmesan salt and pepper 1/4 cup butter splash of white wine 1/2 cup milk(half&half work too) Slice and chop the onion and mushroom and saute in the butter(in a large sauce pan) on low-med. heat until soft. At this point add some of the wine to the pan to get the bits off the bottom. Turn off the heat. Stir in the soup and a bit more wine and 1/2 cup of milk. In a large greased casserole dish put in the frozen veggies and stir the chez until all mixed then add the mushroom onion mix- stir well.I sometimes top this with more swiss chez and then the french fried onions. Bake for about 30-40 minutes until top is browning and its bubbly(at 350) This is a very versatile recipe-you can sub in other veggies if you don't like certain ones or even a differnt chez if you don't like swiss

Hi, I have an onion side dish that has become traditional for our family holiday dinners. Recipe as follows:
Ingredients
One or two cans of white onions
cheddar cheese
plain bread crumbs
butter or margarine
flour
Preheat oven to 350, drain liquid from canned onions, saving the liquid. Place the onions in a casserole dish. Make a rue with the flour and butter in a frying pan. Add the onion liquid to the rue and stir til thickened. Add grated cheddar cheese to make it a cheese sauce. Pour over onions in baking dish. Cover generously with grated cheese. Sprinkle well with bread crumbs. Bake until bubbly and cheese has melted and is crusty. Delicious. Sorry no amounts, never used a recipe, just made a cheese sauce and put together. Good Luck!

Tater Tot 'n Cheese Bake
From chef and author Emeril Lagasse
Ingredients
2 teaspoons butter
2 eggs
2 cups whole milk
Salt and white pepper
2 cups grated yellow cheddar cheese
2 cups grated white cheddar cheese
1 cup ham, diced
2 pound bag tater tots, thawed (brand of your choice)
Directions
1. Preheat the oven to 350 degrees. Grease a 9 by 9 by 2-inch square baking dish with the butter.
2. In a mixing bowl, whisk the eggs and milk together. Season the mixture with salt and pepper. Add 1 cup of the yellow cheddar cheese, 1 cup of the white cheddar cheese, the ham and the tater tots. Mix the mixture thoroughly.
3. Pour the mixture into the prepared pan and sprinkle the top with the remaining cheese. Place in the oven and bake for 40 to 45 minutes or until the top is golden brown. Yield: 4 to 6 servings.

Here's an easy one that will make you look like a gourmet' !
Mixed roasted fall veggies. ( this is my own recipe )
Depending on the number your feeding...
Take a couple of Acorn squash, Butter nut squash, and other squash type gourds.
Simply slice them in half, then rub all the surfaces with olive oil.
sprinkle them with coarse salt and just a tiny dash of cinnimon and nutmeg.
Roast in the oven at 350 for about an hour.
Serve in whole pieces or quarters with a small pat of butter. The veggies will easily scoop out of their outer shells for the person eating them.
They look great, have great variety, and taste even better.
PS... you can do this with sweet potatoes or yams also... just cook for only 30 - 40 mins.

Sweet Potato casserole
7 sweet potatoes cooked
8oz. cream cheese
2 tbsp. butter
1/4 tsp. Cinnamon
1/2 apple/ chopped finely
1/2 cup crasins/dried cranberries
1/3 cup brown sugar
1/4 cup butter
2 cups of honey bunches of oats cereal
mix last three ingredients together, and set aside.
chop apples, then mix the apples and cranberries together, set aside
cook the sweet potatoes then mix together with cream cheese, butter and Cinnamon, put in the bottom of the bowl
On top of the sweet potatoes put the apple mixture
then add on the cereal mixture
Bake at 350 for about 25-30 min .
I have three kids and a picky husband they loved this I hope you try it and love it too.......

Asparagus in Lemon Sauce
This recipe is so easy and delicious. Just the thing to fit into your busy day.
2 pounds fresh asparagus, tough ends broken off
1/2 cup olive oil
1 teaspoon lemon peel
1/2 cup fresh lemon juice
1. Cut asparagus into 2-inch pieces. Bring two cups water to a boil over high heat. Add asparagus reduce heat and simmer until crisp-tender, about 5 minutes. Drain.
2. In same saucepan, combine olive oil, lemon peel and lemon juice. Cook over medium heat for about 2 minutes. Toss with warm asparagus. Serve warm. Garnish with lemon slices.
Serves 6.

"Carrot Cabbage Slaw" - 12 servings
4 cups shredded cabbage
2 cups shredded carrots
2 medium Golden Delicious apples; diced
1 cup raisins
1/2 cup chopped walnuts
1/2 cup honey
1 tbsp. lemon juice
1 cup (8 oz.) sour cream
1/4 tsp. salt
1/8 tsp. pepper
1/8 to 1/4 tsp. ground nutmeg (optional)
In a large serving bowl, combine the cabbage, carrots, apples, raisins and walnuts. In a small bowl, combine the honey and lemon juice until smooth. Stir in the sour cream, salt, pepper and nutmeg, if desired. Stir into cabbage mixture. Serve or chill.

For mashed potatoes:
2 large leeks
1 can diced tomatoes
1/2 pound bacon
8-10 large potatoes
Boil the potatoes til finished, mash, let rest.
Chop leeks (only green part) and fry them until tender. Cook bacon until the doneness that you like, and add everything together with 1 large tablespoon of butter - BLT potatoes.
Also, if you want to have carrots, make as much as you like and boil until they're done. Add 2 tablespoons for every large bag of baby carrots you use of butter, and the same for brownsugar. Sprinkle with parsely and stir together.
