Turkey Brine Recipe
A easy to prepare water-based solution that will help enhance the flavor and retain the moisture when preparing turkey as well as other types of poultry.
Turkey Brine (+)
Ingredients
12 to 14 lb. turkey (not pre-basted or kosher)
- 1 cup sugar
- 1 1/2 cups kosher salt
- 2 bay leaves, broke in pieces
- 1/3 cup fresh chopped thyme
- 1 head of garlic, peel and separate cloves
- 4 juniper berries, smashed
Turkey Brine
Container: Large Stockpot
Prep Time: 30 minutes
Directions
Combine the sugar, salt and 4 quarts of water together in a large bowl and stir until the sugar and salt are dissolved.
Add the remaining ingredients.
Place the turkey in the stockpot and add the brining solution.
Add enough cold water to the stockpot so that the turkey is completely submerged.
Cover the container and place in the refrigerator or another cold storage area. Allow the turkey to stand in the brining solution for about 10 to 12 hours.
After the required soaking time, remove it from the container and thoroughly rinsed under cold water. The brining solution should be discarded because it cannot be reused.
The turkey can be cooked using several cooking methods, such as roasting, grilling and deep frying.

Even though it's dangerous I like the deep fried turkey, but the best way is to put it in one of the cooking bags and bake it in the oven, basting it every so often, make sure you take the turkey set the turkey out the night before if you are using a frozen turkey.

I always always use a reynolds cooking bag. It cooks in about half the time, browns beautifully and clean up is a breeze. Be sure to shake a tablespoon of flour in the bag and have celery, carrots and onions to toss into the bag to go under (and flavor) the turkey. The recipe and hints are in the box with the cooking bags.

Use a cooking bag in a roasting pan (uncovered). Traditional baking method in the oven. The bag really holds the juices in nicely.

Normy is right. Try Reynolds brand oven bags large size. Directions are on package. Save drippings for home-made gravy. EASY!
