I used to use POGO batter mix for my mushroom caps, but cannot find the mix anymore. Does anyone have a recipe for a good batter for mushroom caps as well as cheese sticks?

There used to be a fishing show on one of the independent TV stations, and the host always showed how to cook the fish he caught. Once, he caught bass and said the best way to cook is batter and deep fry. He went on to say that he had tried many different mixes and recipes, and was going to show what he thought was the BEST he had ever tasted. The only ingredients were Bisquick and beer. Don't worry about the alcohol in the beer. Alcohol boils off and evaporates at 165 degrees F, and your oil will be at least 350 F. The breading has a pleasant malt taste, and IS VERY GOOD. If you want your batter to leave a thick coating, don't add as much beer and make a thick batter. Reverse if you want a thin breading. If you're still worried about the alcohol, try substituting broths for the beer. Veg broth for mushrooms or cheese, fish broth for seafood, etc.

Buy any batter mix and substitute beer for the liquid. As for the cheese sticks, that is more of a breading than a batter. Maybe dredge them in flour, egg (beaten) and Italian bread crumbs then deep fry.

"Batter"

1 cup sifted flour
1/2 tsp. salt
1 tsp. baking powder
1 egg; slightly beaten
2/3 cup milk
1 tbsp. corn oil

Sift together flour, salt and baking powder. Combine egg, milk, and oil. Add to dry ingredients and mix only until smooth. Dip fish, chicken or vegetables in batter.
