I love to eat beef tongue. It sounds terrible, I know, but if done right it is very tender and delicious.
I had it once at RuthAnne's restraunt, in Quakertown, Pennsylvania, there about's. They made it taste just like Saurbraten. Man, they can really cook in the old farming areas of Pennsylvania.
About the loaf, I never thought to turn it into a loaf! But why not? My Mom used to make it at home, too..It would tenderize it, to.
Weell, first of all you will need a meat grinder I presume. Unless you can have the deli do it for you.
Then go with any basic recipe, except use only those things that would taste good with it. So I would alter the recipe a bit.
Milk, instead of tomato juice? Maybe alittle apple, or saurbraten type flavorings.
