For example, can your e-mail be redirected ? If so, how can I find out if there is a hidden program doing this on my computer ?

Yes, so if you're at work, you'd better not play around on the computer so you won't lose your job.

You can check your settings for your email account and make sure that they are not being forwarded.
Some email accounts allow you to redirect your mail. To do that someone has to have acces to your actual account. If your boss moniters your use, they can easily find out the info necessary. AND YES, it is legal for them to monitor your use at work. (They own the computer and are paying you to work, not play)

Yes, there are many programs that do that. If you did not put the program on your computer then it isn't on there. However, you can go to your internet tools and delete temporary internet files, so no one can look at your records.
