I like to throw a box of junior mints on a pan of brownies hot out of the oven and spread when melted. They make the cheapest brownie mix taste good.

There are egg replacers on the market for vegans and people with egg allergies. There are liquid like ones in jars that I've never used as they are quite pricey to 'try' so I cannot attest to those ones. When I bake at home I generally use Ener-G egg replacer which is a powdered form you mix with water and then put into the recipe. It works very well and it nearly always turns out the same as the recipe would with regular egg (I'd definitely make sure to always pre-mix it JUST before adding). It's made from mostly potato starch and tapioca starch and contains no dairy or eggs whatsoever. There's even a quiche recipe on the box if you want to be adventurous with it. [And just for the record, mayonnaise CONTAINS egg unless it's Veganaise or something.]

It should have the recipe on the pack, but here goes:

1 cup of water, 1 egg. Mix with brownie mix thoroughly, until no lumps are left. Grease a pan and pour in, then bake at 250 degrees for 10 minutes. You can ice them if you want.

Use a family size Duncan Hines mix and follow instructions on the box. Stir in one 12-ounce package of peanut butter chips. Pour into a 9x13 pan that has been greased only on the bottom. Bake three minutes longer than package instructions.

Add some chopped walnuts or pecans to the mix before baking, tastes great!
