Trichinosis is a food-borne disease caused by a microscopic parasite. Anyone who eats undercooked meat of infected animals can develop trichinosis. Pork products are implicated more often than other meats. The best prevention is to make sure that pork products are properly cooked. The desirable temperature is at least 150 degrees Fahrenheit. Storing infected meat in a freezer with a temperature no higher than -13 degrees Fahrenheit for 10 days will also destroy the parasite.

Pork is actually much safer and cleaner (health-wise) than poultry is these days, and it is certainly a good meat to eat. Back in the day, pork needed to be cooked well, but in the US, this is no longer necessary since pig farms are very sternly regulated environments. I always cook my pork chops medium (lots of pink and maybe a little red), and it is much better. Cooking something well-done always ruins it, no matter what the animal.

I suppose it depends on what country you are in but here in the U.S. pork is just fine to eat. If it wasn't there would be an awful lot of sick people. If you live in the U.S. you are wasting time worrying about stuff like this.
