What are some ways that i can use pumpkin seeds to make a delicious dinner?

Pipian paste (pumpkin seed paste)
Categories: Sauce
Yield: 4 Servings
3 Pasilla chiles (dry) seeded
4 Ancho or Mulato chiles (dry) seeded
1 lg White onion chopped
1 c Pumpkin seeds
2 tb Sesame seeds
½ ts Cinnamon
1 tb Cumin ground
Peanut oil
1 ts Peanut butter
Hot chicken stock or beer

Something I concocted this weekend. I made monkfish enchiladas with this: Place chiles in a glass bowl. Cover with boiling water for 10-15 minutes to reconstitute. Drain. Puree in blendor or food processor or molcajete. Reserve Toast pumpkin seeds. Toast sesame seeds. Grind them finely. Add these with other dry ingredients to chile puree. Saute onions in peanut oil til nearly caramelized. Add chilepaste & peanut butter. Saute for 10-15 minutes, adjusting fluid with chicken stock or beer as needed. I don't eat nor do I recommend pork but I bet this next one would taste great with chicken too:

Pork Tenderloin with Pumpkin-Seed Sauce

Prep and Cook Time: 40 minutes, plus marinating time.

4 canned chipotle chiles in adobo sauce, chopped, plus 2 tbsp. sauce
1/4 cup orange juice
1 tablespoon light brown sugar
2 lbs. pork tenderloin
3/4 cup hulled pumpkin seeds
1 cup heavy whipping cream
1 clove garlic, minced
1 teaspoon chipotle chile powder
1/2 teaspoon salt
1 tablespoon pumpkin-seed oil

1. In a small bowl, combine chiles, sauce, orange juice, and sugar. Put pork in a baking dish and add marinade, turning pork to coat. Cover and refrigerate at least 2 hours and up to overnight.
2. Preheat oven to 375°. Toast pumpkin seeds on a baking sheet until they have popped and are just starting to brown, 7 to 11 minutes. Let cool. In a food processor, whirl 1/2 cup of seeds into a paste.

3. Heat grill to medium-high. Grill pork, turning once, until an instant-read thermometer inserted into center reads 160°, about 10 minutes per side. Let rest 10 to 15 minutes. Reserve juices.

4. Meanwhile, in a medium pan over medium heat, combine pumpkin seed paste, cream, garlic, chile powder, and salt. Cook, whisking until thickened, 3 to 5 minutes. Stir in reserved pork juices.

5. Slice pork into 1/2-in. medallions. Drizzle with sauce and pumpkin-seed oil and garnish with remaining 1/4 cup toasted pumpkin seeds.

Note: Nutritional analysis is per serving.

Yield: Makes 4 to 6 servings

Dinner?

Not sure about that, but what we do is we take the pumpkin seeds, wet them, sprinkle salt on them & bake them! It makes a really nice little snack!

Roasted pumpkin seeds make a great snack. Spread on a cookie sheet and brush them with olive or other oil and sprinkle with salt and other favorite seasoning and roast until toasted. Makes a great wholesome and tasty snack.

i know a good recipie for a snack, but oil on a cookie sheet then scatter the pumpkin seeds on the cookie sheet, sprinkle salt and paprika on the pumpkin seeds and then bake then until they turn brown.

Try toasting the seeds and grinding them to make a pulp. I know that Mexican mole contains seeds, and they cook chicken and steak in it, but I like to stuff the pulp mixture with a nice queso fresco in a pepper for Rellenos. Poblano or even Anahiems work great for that.

well they're not really that filling for a dinner! but you could have them for before or after. just sprinkle as little of salt as you want on them and then bake em.

Just add them anywhere. You could sprinkle some on top of a side dish or in a salad. You can also use them to simply decorate dishes!!!!!

Toss some in your soup and simmer it for a while.
Mix some with meat loaf.
