The best place to find quick and easy recipes is the Kraft website. They have recipes that can be prepared in 15 mins or less and even give you the "brand names" of the items to use.

Meanwhile, here's one I picked up from their website (love it!):

Cheesy Chicken Simmer
2 tsp. vegetable oil
4 small boneless skinless chicken breast halves (1 lb.)
2 cups frozen broccoli florets
1 can (10-3/4 oz.) condensed cream of chicken soup
1/4 lb. (4 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up
3 cups hot cooked MINUTE White Rice

HEAT oil in large nonstick skillet on medium-high heat. Add chicken; cook 7 min., turning after 3-1/2 min.
ADD broccoli; stir. Stir in soup and Velveeta until well blended. Reduce heat to medium; simmer 7 min. or until chicken is cooked through.
SERVE over the hot cooked rice.

I'm sorry to hear about your Mom. I went through this with my sister. I think very simple meals. Steamed veggies, mixed green salads and chicken or fish. Simple dressings. Salmon is great since you can broil it and it only takes 8 minutes without turning and you can brush it with some mustard or a little soy sauce. Martha Stewart has some excellent fish recipes. Go to her website. Also I would suggest just a nice roasted chicken. Ina Garten has wonderful chicken recipes and roasted and steamed veggie recipes. She's on the Food Network. Also some nice pasta recipes would be good and I'm sure Mom will appreciate anything you do. Watch the Food Network during the week. Ina is on every day and her recipes are fabulous and very easy. I wouldn't do too much with beef. Hope this helps. Much good luck to you and your sister and your Mom.

Perhaps the reason you want a simple recipe is because you are too tired to make a more elaborate dinner. Therefore, I suggest you cook liver. It is the easiest dinner and contains more nutrients than any other food that I can think of.

Just rinse off the liver. Pat it dry with a paper towel. Dice up some onions and brown them in a frying pan. Now place the slice of liver over the browned onions and cook just until turns brown on each side. Liver is good tasting when it is blood red. You can cook it longer if you like, but it will be much drier and not as good.

Be healthy, happy.

Not sure what kind of food you like best, so if you go the www.allrecipes.com (or http://allrecipes.com/Search/Recipes.aspx?WithTerm=&SiteId=31) you can do a search for quick and easy recipes with certain keywords. They also have an ingredient search engine, so if you have some stuff at home you want to use up, this is a good site. Good luck with your cooking!!

Herbed Fish and Red Potato Chowder:

If you can't find halibut, substitute cod or other flaky white fish. Serve with bread.

2 bacon slices
3 cups diced red potato (about 1 pound)
1 cup chopped onion
3 tablespoons all-purpose flour
2 (8-ounce) bottles clam juice
2 cups 2% reduced-fat milk
1 tablespoon chopped fresh thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
12 ounces skinless halibut fillets, cut into 1-inch pieces
2 tablespoons chopped fresh flat-leaf parsley

Cook bacon in a Dutch oven over medium-high heat until crisp. Remove bacon from pan. Reserve 1 tablespoon drippings in pan; discard remaining drippings. Cool bacon, and crumble. Set bacon aside. Add potato and onion to drippings in pan; sauté 3 minutes or until onion is tender. Add flour to pan; cook 1 minute, stirring constantly. Stir in clam juice; bring to a boil. Cover, reduce heat, and simmer 6 minutes or until potatoes are tender. Stir in milk; bring to a simmer over medium-high heat, stirring constantly (do not boil). Stir in thyme, salt, pepper, and fish; cook 3 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Stir in parsley. Sprinkle with bacon.

Yield: 4 servings (serving size: 2 cups)
