A friend of my mother's gave us a baby gift, and I sent them a thank-you note right away. Then, I got a card thanking us for the thank you note. I don't know what to do now without seeming rude.

Well, now I'm amused with the thanking them for the thank you for the thank you note... hmmmm, I wonder how far I can take this, lol!

Well, you got a Thank You note for your Thank You note!
I would suggest you let it stop at that. Maybe you wrote a very nice thank you and the friend wanted to acknowledge it. You can write back and begin a correspondence, or, you can let it go. I recommend letting it go!
Maybe send a card at Christmas or Hanukkah....

Just forget about it now, everyone has said thank you, if you were to carry on that way you'd be writing thank you notes for the rest of your life! You won't seem rude by not answering...again!

Just ignore it, maybe thank them for the note next time you see them. Theres no point in getting in a thank you card war.

I want to thank-you for sharing about the thank-you note you sent and the thank-you note you received in return. Thank-you!
Get it? LOL!

I'd send one more note, after the birth of your baby, and enclose a photo of your new arrival. Sure to bring a smile to the recipients, anyway. =)

Perhaps this woman is not accustomed to receiving thank you cards and she was so thrilled she had to thank you for it. It was not necessary for her to thank you for a thank you card and it *certainly* isn't necessary for you to thank her for thanking you for your thank you! Not rude at all, you've been most gracious!
