Try this: easy but unusual: baked tomatoes with Italian seasonings and cheese: lightly grease baking dish with extra virgin olive oil. Cut large tomatoes into halves. Baste tomatoes with more olive oil and place them cut side up in the dish. Sprinkle each tomato face with black pepper and with Italian seasoning mixed herbs and some finely chopped fresh garlic. Then sprinkle with bread crumbs - enough crumbs to cover each tomato so that you cannot see any of the herbs or garlic. Then drizzle with more olive oil until all bread crumbs are moistened. Put into oven about 12 minutes before you put the tilapia. 7 minutes before tilapia is finished lay some mozzerella or provalone (or both) onto each tomato. Not only delicious but a nice color contrast as well; even more so if the dinner plates are finished with a nice green vegetable.
Enjoy with a nice fruity Italian wine like a Gavi, pinot grigio, Vernachia, Frascati or similar.
PS. I assume the tilapia are [the usual] farmed filets, so muhammed's warning about bones can be ignored.

A baked potato? Steamed vegetables? Plain old rice? Whatever you choose, don't pick anything that will overpower the taste of the tilapia. It's really mild.
Aside from that, beware of the bones; they have lots of bones along the top and bottom. Tilapia goes good with white wine, or beer.

Fresh small asparagus spears with butter ( or margarine ) on top sprinkled with a little onion powder and garlic powder. This goes great with fish. Also broccoli ...again with butter with this wonderful seasoning called Morton's Season Salt. It has a blue cap. This stuff gives the most wonderful taste to broccoli.
Could add a baked potato as well.

Mediterranean-Style Vegetables
2 cup Zucchini sliced
2 cup Red, yellow, or green sweet peppers sliced
2 cup Broccoli flowerets
1/4 cup Broth, (reduced-sodium)
2 x Garlic, cloves minced
1 tbl Basil or oregano snipped fresh or 1 teaspoon dried basil or oregano, crushed
1/4 tsp Pepper
3 x Tomatoes, medium chopped
Serves: 6 to 8 side-dish servings
Prep Time: 15 minutes
Cooking Time: 6 minutes
In a Dutch oven or large kettle combine zucchini, sweet peppers, broccoli, broth, garlic, basil or oregano, and pepper. Bring to boiling; reduce heat.
Simmer, covered, for 6 to 8 minutes or till crisp-tender, stirring occasionally. Stir in tomatoes.

Hey there, sounds delicious, may I come on over??!!!! I would serve your tilapia with perhaps a mushroom risotto with some nice shavings of asiago cheese topping it. Just a suggestion, thats what I would do! Hope this helps, enjoy!!!
