I tried to make baked brie once but was not impressed, but I probably did it wrong.

You eat it all (cover), but the trick is that Brie Cheese has to be eaten at room temperature or you can puff bake it a little in the oven.

Yeah, love it.
Great on a cheese board with grapes. They also do blue brie and pecan brie etc.. in some places.
A lot of people dont eat the "rind" {white bit} but if you cut it on a slant you only get minimal amounts and it adds to the flavour. Never used to as a kid but do now.
An unusual cheese that has ben mentioned in Wallace and Gromit is stinking bishop, really does honk. My Dad persuaded me to try some by holding my nose till it was in my mouth. Nice cheese but very pongy!!

I love Brie on crackers or baked in a puff pastry. Spread top of brie with apricot preserves, wrap in pastry. bake till golden, top with more preserves, sprinkle with almond slivers, bake a little more.
Serve hot on crackers,,,delish,,,

Absolutely love it with a cracker as a snack. I use it as an appetizer for when me and my gf go out on picnics. Gives us something to nosh on while I prepare the rest.
