Did you know that if you roast your turkey upside down for the first couple of hours that you will have the juiciest turkey. And I mean breast side down.

I have a big family ever tried to turn a 28 - 30 pound hot turkey.

I use the quick cook method.
Stuff and truss the bird
Cover and seal completely with tin foil
roast at 450 for 1 hour
400 for 3 hours
uncover and brown at 350.

turkey is moist and done in 5hours. I think the recipe originally came from "The Joy of Cooking"

Naturally cause the juices run into the breast which is usually the driest part of the bird. I've done the same thing with chickens for years. Another good way to insure you get a moist turkey is to brine the bird before cooking. Did it for the first time last thanksgiving and it came out great.

When I was taught to cook a turkey... I was told to always cook breast side down.

It makes sense, most of the fat is on the underside of the turkey. It makes it a self baster. Never tried it myself, but will give it a shot next one i make. Good idea!

I have heard of that but never tried it. Sounds like a good idea though.
