I know NATA sells a reference book that goes over ground operations. If you don't want to buy a book - I suggest going to your local airport and speaking with the ramp agents and employees at the FBO's they will be able to teach you a lot.

There are probably aviation schools at your local airport. They offer ground school courses. Or, if you feel like you are a good student and can teach yourself, order the ground handling ops textbook and learn yourself! You'll end up saving yourself about $250 that way.

If you want to know the ground handling/ maneuvering characteristics of Boeing airplanes you can find them at:
http://www.boeing.com/commercial/airports/plan_manuals.html

Other manufacturers have similar sites where you can get this data.
