This is a very broad question without much detail. As I understand you, you wish to permanently delete only certain files off your harddrive, not the entire harddrive? As for finding something in which "no undelete program" can restore those files, I'm not real saavy as to what that would take. At that level, all I am aware of is how to erase a harddrive so that only the most advanced equipment in the world has a prayer of MAYBE getting information off your harddrive.
Other than that, you can get programs such as Window Washer or my personal favorite: CCleaner which will erase the files and cookies that are NOT NEEDED anymore.
There is one program I know of that has a Secure Shredder built into it, and could, theoretically, shred something 100,000,000 times, though I would WARN NOT TO USE THAT FIGURE. 5 is good, and 10 would be top level. In the Advanced Mode, click Tools, then click Secure Shredder, pick a Template and chop away.

smash the hard disk with a sledgehammer, then burn the remains.
the remains should then be dumped into an active volcano.
i'm not kidding either, that's the only way the data can't be recovered.

use tune yp utilities - tune up shredder , deletes ur files so that they can never be restored
