Serve chicken a la king on toast or pastry shells, or serve with rice.
INGREDIENTS:
1 cup sliced fresh mushrooms
1 small red bell pepper, thinly sliced
1/2 green bell pepper, thinly sliced
4 tablespoons butter
2 cups white sauce, recipe link below
1/3 cup dry sherry
1 1/2 teaspoons dried leaf tarragon
pinch ground cayenne pepper
1/2 teaspoon salt
1/4 teaspoon white pepper
4 egg yolks
1/2 cup heavy cream
3 cups diced cooked chicken
PREPARATION:
In a saucepan sauté mushrooms and red and green bell pepper in the butter for 4 to 5 minutes. Add white sauce, sherry, tarragon, cayenne and salt and pepper. Bring just to the boiling point, stirring constantly.
Recipefor sauce
Whisk egg yolks with cream and quickly stir into the sauce. Add the chicken and heat through; do not boil. Serve chicken a la king over rice, toast, or pastry shells.

Chicken Ala King
1 1/3 cup Butter
1 1/3 cup Flour
1 1/3 qt milk
1 2/3 cup Chicken stock
2 2/3 x Stewing chickens,cooked
2 2/3 sm Jars pimento
2 2/3 x Eggs
Salt to taste
Paprika
1 1/3 cup Light cream
Melt butter. Add flour and milk to make creamy broth. Thin down with chicken stock until like a thick cream. Add pimento to cream gravy; stir in chicken lightly. Beat eggs thoroughly; stir into mixture. Just before serving, add 1 cup light cream. Serve in Pepperidge Farm patty shells or noodle nests or Holland rusks or English muffins.

Hi, not sure if this recipe will help or not but it has been passed down for at least 3 generations in my family that I know of.
Melt 2 tablespoonfuls of butter in a pan and then add 1/2 of a green pepper shredded and 1 cup of mushrooms sliced thin.
Stir and cook 5 minutes and then add 2 level tablespoonfuls of flour and 1/2 teaspoonful of salt.
Cook until frothy and then add 1 pint of cream and stir until sauce thickens.
Put this all in a double boiler, add 3 cups of chicken cut in pieces and let stand to get very hot.
In the meantime, take 1/4 cup of butter and beat into it the yolks of 3 eggs, teaspoonful of onion juice, 1 tablespoon of lemon juice and 1/2 teaspoonful of paprika.
Stir this mixture until the eggs thicken a little. Combine the two mixtures, add a little sherry and finally shredded pimiento before serving on toast

Chicken a la King is basically chicken in a white sauce made with flour and with pimentos. You can make the base by using flour and butter to make a roux. Make the roux first, then add white wine and chicken broth to the desired consistency. Or for the classic version, a sauce with egg yolks...

.. Deskin the chicken , leave in the bone if they aren't boneless because this adds more flavor to the meat. toast 3 slices of bread (any kind but wheat is best) till dry, not burned. . let cool and crush into crumbs. Use 1/2 tsp. salt. 1/2, tsp pepper 1/4 tsp sage and 1/2 tsp lemon pepper or garlic. roll chicken in 2 beaten egg whites then roll in bread crumb mixture. Slightly grease a cookie sheet or use a spray non stick. place chicken meat side down, cover with foil and bake at 350 degrees for 20 mins. then turn chicken over and over and cook 25 mins more. You can remove foil 10 mins before its done for a crispy coating.

2 tablespoons chopped onion
4 ounces fresh sliced mushrooms
1 teaspoon salt
1/2 teaspoon Worcestershire sauce
2 cups milk
2 cups diced cooked chicken
1/4 cup chopped drained pimiento (2 ounce jar)
PREPARATION:
Melt butter or margarine in a medium saucepan. Cook onion and mushrooms over medium low heat until onion is tender. Add flour and salt, stirring until mixture is smooth. Gradually stir in milk and Worcestershire sauce. Continue cooking and stirring for about 3 minutes or until mixture is thick and begins to bubble; stir in chicken and drained chopped pimiento. Heat through and serve over hot cooked rice, pastry shells, or toast.
