I assume the "grey words" you are referring to are disabled menu items. The only way to enable them is to create a context in which they are valid (and therefore enabled).

For instance, you cannot select the "copy" action from a menu unless you have something selected which CAN be copied. Otherwise, copy has no context and no validity. The software designers disabled this functionality so that you cannot think you are copying something when you actually are not.

So, the way to click on them is to enable them - and that depends very much on what application you are trying to use and what it is you are trying to do.
