Chili Relleno Casserole:

Cut three-four cans of whole green chilies so the chilies lay flat.

Mix together 3 eggs w 2/3 cup of flour and 1 1/4 cup of milk (adjust if needed)

Mix 2 c cheddar chees w 2 c jack cheese

spray a 1 1/2 - 2 quart casserole dish w no-stick spray and layer chilies, cheese, suace mix into 2 or three layers.

Reserve 1/2 cup of cheese mix

spoon a sm can of tomato sauce on top

cook 30 mins at 350 F

add remaining cheese

20 mins more at 350.

Shouldn't cost too much and it is very good!

No, not really.

"Meat, in its broadest definition, is animal tissue used as food... Eggs are rarely referred to as meat even though they consist of animal tissue."

And, the unqualified use of "vegetarian" does normally mean a diet that includes eggs.
