Beet sugar us sugar derived from beets. Beets are very sweet by nature and that is used instead of cane sugar because I believe it is cheaper to make. It's made the same way cane sugar is made, sorry I don't have any specifics.

You find it more in Europe, and as far as differing only theat the beets like the cane sugar plants is ground and the liquid is boiled down, you would find if you tried beet sugar it to be a bit sweeter than cane sugar, basically the process is the same a with cane sugar, and it can be used in the same ways, if you go to Germany you will find a cone shaped sugar loaf, and you buy a plastic grinder and like pepper.
The Scandinavians, are quite fond of this type of sugar, in England you here of it as castor sugar. And most of the sugar in Europe is in laof or lump form, granulated is mostly used for cooking.

Beet sugar comes from Sugar Beets, a variety of beet that is high in the same kind of sugar we get from sugar cane. I don't know the exact process for extracting the sugar although I am sure they have to be crushed and the mash probably pressed to get out the sugar laden juice and then evaporated to turn it into table sugar.
