Sugar Pie's Artichoke Tapenade (my own recipe!)

1 (14 oz) can quartered artichoke hearts, drained
1 (8 oz) jar marinated artichoke hearts, drained
2 Tbsp. fresh parsley, rough-chopped
2 Tbsp. EVOO
1 Tbsp. canola oil, or mild salad oil
1/3 cup. freshly grated Parmesan cheese
1 Tbsp. lemon juice
1/4 tsp. granulated garlic
1/2 tsp. kosher salt, to taste
few grinds black pepper, to taste

Sort through artichoke quarters, removing any tough outer leaves. Place all ingredients in food processor, and pluse until a coarse paste is formed. Adjust salt and pepper as desired. Yield: 1½ cups.

Serving Suggestion: Place thin slices of baguette or sourdough bread on baking sheet, and drizzle with EVOO. Toast in 375ºF oven 4-5 minutes. Remove, and spread with artichoke tapenade. Sprinkle with freshly grated parmesan cheese, and return to oven for another 5 minutes. Top w/ FGBP and serve. Good hot or at room temp.

Also good in an entree tossed w/ hot pasta, fresh diced roma tomatoes, and grilled chicken breast, maybe some feta cheese....

BLUE CHEESE BITES

1 pkg. refrigerator buttermilk biscuits
3 tbsp. butter
3 tbsp. blue cheese, crumbled

Melt butter and cheese together in small saucepan. Cut each biscuit into 1/4's and lay in bottom of glass pie plate. Evenly drizzle butter and cheese mixture over biscuits. Bake 15 minutes at 350 degrees. Serve warm.

Chicken Puffs

1 cup chicken broth
½ cup margarine
2 tsp. Worcestershire
1 cup flour
1 Tbsp chopped parsley
1½ tsp. salt
½ tsp. paprika
1/8 tsp cayenne pepper
4 eggs
1 (5 oz) can boned chicken

Combine chicken broth, margarine and Worcestershire in saucepan. Heat to boiling. Combine flour, parsley, salt, paprika and Cayenne. Add dry ingredients to boiling broth all at once. Stir vigorously over low heat until mixture leaves the said of the pan and forms a ball. Remove from heat and cool slightly. Add eggs one at a time. Beat well after each addition. Stir in drained chicken. Drop my teaspoonfulls onto ungreased cookie sheet. Bake at 400° for 15 to 18 minutes. Remove from pan at once.

STUFFED MUSHROOMS

24 large mushrooms
1 (10 oz) pkg frozen chopped spinach, thawed
1 large garlic clove, minced
1 stick butter (divided)
1 small onion, finely chopped
8 oz pkg cream cheese, softened
½ cup bread crumbs
1/8 tsp pepper
3/4 tsp dry mustard
1/4 tsp nutmeg
2-3 Tbsp. parmesan cheese, grated

Remove mushroom stems; chop and set aside. Cook spinach in microwave 5 minutes or so; drain and squeeze out well. In large skillet melt HALF the stick of butter; saute garlic in butter for 1 minute. Turn off heat. Dip mushroom caps in butter, coating on both sides. Place in a 13x9 baking dish. Add remaining butter to skillet and saute chopped stems and onion until onion tender. In large bowl combine spinach, cream cheese, bread crumbs, mushroom/onion mixture, and seasonings. Mix w/hand mixer. Spoon into mushroom caps. Sprinkle w/additional parmesan. Bake at 375 degrees for 15-20 minutes.

Festive Shrimp Pinwheels

1 can (8 oz) Pillsbury refrigerated crescent dinner rolls
1/3 cup garlic-and-herb spreadable cheese (from 5.2- to 6.5-oz container)
1/2 cup coarsely chopped cooked shrimp
2 tablespoons chopped green onions (

Heat oven to 350°F. Spray cookie sheet with cooking spray. Unroll dough and separate into 2 long rectangles; press each into 12x4-inch rectangle, firmly pressing perforations to seal.
Spread cheese over each rectangle. Sprinkle each with shrimp and onions; press in lightly.
Starting with one short side, roll up each rectangle; press edge to seal. With serrated knife, cut each roll into 8 slices; place cut side down on cookie sheet.
Bake 15 to 20 minutes or until edges are golden brown. Immediately remove from cookie sheet. Serve warm.

Korean Sesame Chicken Wings

1½ lbs. chicken wings, cut in half and tips removed
2 Tbsp. all purpose flour
1/4 cup cornstarch
3/4 tsp salt, optional
2 Tbsp. sugar
1½ tsp sesame seeds, toasted
1 clove garlic, minced
1 scallion, chopped
1 egg, beaten
2 Tbsp. soy sauce
½ cup peanut oil, for frying

Wash chicken wings and pat dry. Mix remaining ingredients, except oil in a bowl. Add chicken, turn to coat, cover and marinate wings in refrigerator 3 hours or overnight. Remove wings, pat dry and discard marinade. Deep fry about 4 minutes until golden brown. Drain on paper towels.

HOT CRAB DIP

¾ cup sour cream (can use low fat)
2 Tbsp fresh lemon juice
1 Tbsp grated fresh onion
1 tsp Worcestershire sauce
¾ tsp dry mustard
¼ tsp garlic powder
1 (8-oz) tub light cream cheese, room temp.
1 cup (4 oz) shredded sharp cheddar cheese
1 lb. lump crabmeat, drained and picked through to remove shell pieces
Cooking spray
Paprika

1. Preheat oven to 325°F.

2. Combine first 7 ingredients in a bowl; stir well with a whisk. Stir in cheddar cheese and crabmeat.

3. Spoon crabmeat mixture into a 1½-quart casserole coated with cooking spray, and sprinkle with paprika. Bake at 325° for 30 minutes or until thoroughly heated. Serve warm with crackers or crostini.

Yield: 3 2/3 cups

I have a recipe that is a hit every time...
and it is easy and simple and looks fantastic on your table

one large round camembert
chopped walnuts, 1/3 cup
chopped dried cranberries, 1/3 cup
your favorite crackers

method:

place cheese on a plate that is microwavable, and that also can be used as nice looking show plate.
Cut a very thin slice off from the top.
microwave starting out with 30 seconds at a time.
It needs to be very soft, but not runny.
then place your chopped walnuts and cranberries on top.
Place crackers around the plate for a pretty presentation.
Serves about 10 people (providing you offer several other dishes).

OK, well this is just a dip with crackers thing but it is very delicious!!

Philly & Beef Dip

1 brick Philedelphia Cream Cheese
1 pkg Carl Budding Beef
Garlic salt(to taste)
Parsley(if fresh, chopped)

Soften cream cheese n microwave.
Chop beef into small squares.
Mix all ingredients together.
Refrigerate.
Can be made into a ball once it's cold enough to form.
Serve with Wheat Thins.
It's a ver simple recipe. I don't usually like Cream Cheese but I love this dip!

Roll out croissants, place a little smoky at the widest part, roll the croissant and bake as directed on the package of rolls

They're quick, cheap and kids to adults love it.
Not very healthy though:(
For healthy, you can make a vegetable platter and various dips, like hummus, sour cream, ranch dressing?? Lots of opportunity for creativity:)

Crab and Lime Quiches

2 sheets frozen puff pastry, thawed
2 eggs
3/4 cup coconut cream
finely grated rind of 1 small lime
2 tsp. lime juice
6 1/2 ounce can crab meat, drained
1 Tablespoon. chopped fresh chives

preheat oven to 415. using muffin tins, lightly grease. cut rounds of pastry (about 3" rounds). place rounds in muffin tin. beat the eggs lightly in small bowl, and add remaining ingredients. season with salt and white pepper to taste. spoon about 1 Tablespoon of filling into each pastry round. bake for 20 minutes or until golden brown. Quiches will rise during cooking, then deflate slightly. serve warm.

Ingredients:
2 pounds boneless, skinless chicken, preferably dark meat
1/2 cup veg oil
2 tsp. minced garlic
1 tsp. grated fresh ginger

Spice mixture:
4 tsp. ground coriander
2 tsp. ground cumin
1/4 tsp. cayenne
1/4 tsp. freshly ground black pepper
Pinch each of cinnamon, cloves, cardamom
2 tsp. fresh lemon juice
1 tsp. salt, or to taste

3 TB melted ghee

1 medium onion, cut into rings
1 lime, cut into wedges



Directions:
If using bamboo skewers, soak first for about 15 minutes to prevent burning.

Cut chicken onto 1 1/2" chunks. Marinate chicken in mixture of oil, garlic, ginger, spice mixture, lemon juice, and salt for at least one hour.

Preheat oven broiler or prepare grill. Thread chicken on skewers. Place skewers in broiling pan 3" from heat and broil for 5 minutes on the first side and 3 minutes on the second, OR grill 5"-6" above hot coals, turning and basting as directed. After turning baste with melted ghee. Chicken should be tender and moist, but not pink inside.

Serve on warm platter, garnished with onion rings and wedges of lime.


"Chicken Tikka" is like saying "chicken chicken"; tikka is the Indian word for chicken. This recipe is similar to tandoori chicken, but does not have yogurt in the marinade and the pieces of chicken are threaded on short skewers. It makes a nice hors d'oeuvres or main dish.

We make a veggie pizza cut up into little bite-size pieces.

Get a Pillsburry crossiant package and bake it according to directions, but don't form the crossiants, leave them flat. Then, after it's cooled, add cream cheese. Top with your favorite veggies! We usually use peppers, broccoli, green onions, and celery. It's delicious. You can also use this to make a fruit pizza, except you need to use fruit instead of veggies. We usually use pineapple, apples, banana, raspberries, strawberries, and blueberries.

Easy Meatball Appetizers
large bag frozen fully cooked meatballs
bottle honey-barbecue sauce
2 tablespoons honey
2 tablespoons dijon mustard

Place meatballs in crockpot for 1- 1/ 2 hrs until cooked through, pour off any water that’s accumulated. Mix honey, mustard and barbecue sauce together and pour over meatballs. Heat through and serve.


Veggie Pizza
1 package crescent rolls
1 cup sour cream
One half cup mayonnaise
1 package dry Hidden Valley Ranch dip mix
1 cup cheddar cheese, shredded
One half cup fresh broccoli, chopped
One half cup green onions, chopped
One half cup carrots, shredded
One half cup zucchini, grated
One half cup mushrooms, sliced
1 8-oz. can sliced water chestnuts, drained and chopped

Spread out crescent rolls on a baking sheet to form a crust and bake for 10-15 minutes at 350 degrees until lightly browned. Remove from oven and allow to cool. Combine sour cream, mayonnaise and dry dip mix and spread over crust. Place vegetables over dressing and top with shredded cheese. Refrigerate until ready to serve. Cut into squares before serving.


CHEESECAKE BALL w/ MINI CHOCO CHIPS
1 8-ounce cream cheese, softened
1/2 cup butter, softened
3/4 cup confectioners sugar
2 tablespoons brown sugar
1/2 teaspoon vanilla extract
3/4 cup mini semisweet chocolate chips

In a medium bowl, beat together cream cheese and butter until smooth. Mix in confectioners sugar, brown sugar and vanilla. Stir in chocolate chips. Cover, and chill in the refrigerator for 2 hours. Shape chilled cream cheese mixture into a ball. Wrap with plastic, and chill in the refrigerator for 1 hour or overnight. Serve with chocolate graham crackers.


Crispy Cheese Poppers
1 package (8 ounces) cream cheese, softened
1 fresh jalapeño pepper, stem and seeds removed, chopped
1/4 cup grated cheddar cheese
18 wonton wrappers (from a 16-ounce package), thawed if frozen
1-1/2 cups vegetable oil

In a medium bowl, combine the cream cheese, chopped jalapeño, and Parmesan cheese; mix well. Place a wonton wrapper on a flat work surface. Dip your fingers in a small bowl of water and moisten the edges of the wrapper. Place about 1 tablespoon of the cheese mixture in the center of the wrapper and fold diagonally to form a triangle. Seal the edges firmly with your fingers. Continue with the remaining cheese mixture and wonton wrappers. In a large deep skillet, heat the vegetable oil until hot but not smoking. Fry the wontons in batches for 30 seconds per side, or until crisp and golden. Remove with a slotted spoon to drain on a paper towel-lined platter. Serve immediately.

BLUE CHEESE, PEAR AND CARAMELIZED-ONION SQUARES
Sweet caramelized onions, pear slices and pungent blue cheese make a good trio in this simply elegant appetizer.
Makes 42 squares.

Crust
2 cups all purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup whole milk
1/4 cup olive oil
2 tablespoons (1/4 stick) unsalted butter, melted

Topping
2 tablespoons (1/4 stick) unsalted butter
2 tablespoons olive oil
3 large onions (about 2 pounds), halved, thinly sliced
3 large pears, thinly sliced
1 tablespoon finely chopped fresh rosemary
1 teaspoon sugar
1/2 teaspoon salt
1 1/2 cups (about 6 ounces) crumbled blue cheese

For crust:
Preheat oven to 425°F. Mix flour, baking powder, and salt in medium bowl to blend. Make well in center of dry ingredients. Whisk milk, olive oil, and melted butter in liquid measuring cup to blend. Slowly pour milk mixture into well in dry ingredients, stirring until just blended and smooth. Roll out dough on lightly floured surface to 10x13-inch rectangle. Transfer dough to rimmed baking sheet. Re-form dough into 10x13-inch rectangle (dough will shrink when moved). Pierce dough all over with fork. Let dough rest while preparing topping.

For topping:
Melt butter with oil in large skillet over high heat. Add onions. Cook until onions are soft and beginning to brown, stirring frequently, about 10 minutes. Add rosemary, sugar, and salt. Season onions to taste with pepper. Reduce heat to medium. Continue to cook until onions are soft and dark brown, stirring frequently, about 20 minutes; remove and cool.
Place pear slices in same skillet adding a little butter if needed, brown over high heat.

Spread onion mixture evenly over dough. Fan pear slices over onions. Sprinkle with cheese. Bake until crust is golden and cheese is bubbling, about 20 minutes. Let cool. Cut into squares and serve.
