In the fridge overnight... this may take 2 days, so pull out of the freezer Tuesday am and put in fridge.

If in a rush, you can use your m/w oven, but only if the dish doesn't come in an aluminum pan.

Allways defrost in the refrigerator, not at room temperature.

Smaller "side" dishes will defrost within 24 hours.

I wouldn't do the potatoes that way. You can peel the potatoes a day or two ahead of time and keep in a bucket of water in the fridge. You can make pies ahead of time, if you guys eat green bean casserole make it up ahead of time but don;t; add the onions until you are ready to cook, if you like corn bread stuffing you can make the corn bread ahead up a head of time and freeze. It takes about 2-3 Months to freezer burn, if you wanted to start making stuff now to freeze you would be okay. You can even start gravy now then just reheat and add the dripping from the bird at the last minute. Whisk hard and it will all come back together.
