Also, If i make them this weekend and freeze them, will they be ok for thanksgiving?

The best are Granny Smith, but just about any apple will make a great pie. If you make the pie but don't bake it and freeze it "raw" you can bake it the day before Thanksgiving. Go right from the freezer to the oven, be sure to pack it safe so it doesn't get freezer burn.

I found a great mixture in Granny Smith, Cameo and Fuji apples. I use 3 large each Granny Smith and Cameo and 2 large Fuji for 1 9 inch deep dish apple pie. Make sure the apples are thinly sliced. Also..I wouldnt freeze them just make them the day before just under bake about 20 minutes. Then put them back into the oven on Thanksgiving for the 20 minutes to finish baking and reheat.

Macintosh are good cooking apples. But I like Granny Smith the best. They remain firm for more texture. Reduce the amount of lemon juice by half, as they are a bit tart. The pie should freeze just fine until Thanksgiving.

Fresh Granny Smiths are usually the best as they are tart and just juicy enough to make a good pie. Don't go overboard on the sugar and spices--just enough to enhance the flavor of the apples. If you bake and freeze the pies they should be ok if you thaw and warm them for Thanksgiving, but not as good as if you bake them the day before. Also, one of my friends puts her apple pies together and freezes them before they are baked, and then bakes them the day before Thanksgiving and she says they turn out fine. I don't know how long it would take to defrost them before baking them, though.

No freezing.

Machintosh are great but the real secret to terrific apple pie is to have half Machintosh apples and half green pears cut like apples. The pears will give the fruit filling of your pie more texture, while the powerfull Mac apples will flavor everything apple.

use a combination of apples Granny Smith and Galia make a great pie after peeling coat the apples with lemon juice for a slightly tart taste

Granny Smith Apples are ideal for baking....but don't eat them raw, they'll give you a sour stomach, and they are very bitter. I'm not sure about the freezing part, but I don't see why not. You can pretty much freeze anything. Have a Happy Thanksgiving!

IMO, Northern Spy or Cortland make the best apple pies.

And yes, you can freeze them (before baking, not after baking) and they will be fine.
