The Gypsy language is called Romani and is derived from the oldest written language, Sanskrit. Romani (or Romany) is the language of the Roma and Sinti, peoples often referred to in English as "Gypsies". It is closely related to those spoken in northern India, Punjabi in particular.
The Gypsy race originated in the northern part of India near the Punjab Region. They refer to themselves as Roma which has mistakenly been called a cognate for wanderer. Roma is instead derived from the word, "Rom," meaning man.
This group had undergone miserable life - highly discriminated, oppressed, enslaved, etc. Invasion of their main territory in the Punjab Region in the 11th and 12th centuries had caused to split this group which resulted migration to Europe and many other parts of the world where they had been treated badly.
Upon migration, the gypsies adopt different languages - gypsies speak the language of a certain place where they are located thus making them to speak different languages. Nevertheless, their original language had been retained and survived but modified.
Today's dialects of Romani are differentiated by the vocabulary accumulated since their departure from Anatolia, as well as through divergent phonemic evolutions and grammatical features. Many Roma no longer speak the language or speak various new contact languages from the local language with the addition of Romani vocabulary.♥

If I am not mistaken, the language would be called Rom or Romi. Thre is no correlation between Gypsy culture and anything Roman or Romanian. They originate from northern India.

Romani and/or the native language of whatever land from which they come. For example, the American Gypsies, who are descendants of Roma immigrants, speak English. :)
