Procedure
Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add green onions and mushrooms, and fry until tender, stirring frequently. Combine the garbanzo beans (with liquid) and garlic in the container of a blender or food processor. Blend until smooth, and transfer to a medium bowl. Stir in the mushrooms and onions. Form the bean mixture into 4 balls, and flatten into patties. Place the burgers in the hot skillet, and fry for about 5 minutes on each side, until nicely browned.

Just at the top of my head I would mash the chickpeas and mix whatever spices I like. Then I would dice up any veggies I like; onions, bellpepper and mix it all up. Then I would form patties and dust off with cornmeal. You can fry them but you said healthy so I would broil them. I would spread a nice fruity glaze over the tops of them like apricot and broil them.

I'm watching this answer because I'd love to find some good recipes from scratch; I've only ever used the dried mix from the health food store, and they usually include bell peppers, which I don't like.
