I assume they are picked before the seeds get a chance to form inside. Otherwise it's THEM messing with the grapes genes!

I believe seedless grapes are a product of crossbreeding in a kind of Darwinian way. Take to types of grapes where the seeds are small...breed them....do that over and over and over....I don't think seedless grapes are really seedless, just so small you can't feel them when you eat them.
