This is my own recipe, and I have had 2 different chefs at two different restaurents ask me for it. I hope you like it!
Ingredient-
1 Whole chicken leg or breast for each person eating
1 can mushroom or celery soup
1 cup of grated mozzerella or cheddar
1 cup brocolli crowns, chopped small
3 cups rice (depending on how much chicken you use)
1 cup milk
1 onion, chopped
1 tblspn Butter, melted
METHOD:
Brown chicken in a frying pan, DO NOT FULLY COOK. You're just searing the outer portion to keep the juices in while baking. When done, set in to a large baking casserole. In the same pan, sautee the onions in a bit of olive or vegetable oil.
In a large bowl, mix Mushroom/Celery soup, milk, 2/3rd of the cheese, the sauteed onions, Stir together thoroughly.
Pour the melted butter over the chicken in the casserole dish, then pour the sauce over top of each piece of chicken. Sprinkle the remaining cheese on top, add more if you like.
Put it in the oven and bake for 30-45 minutes @ 380 degrees, or until chicken is thoroughly cooked.
In a separate pot, about 15 minutes before the chicken is done, put the rice in water 1:2 parts. (1 cup of rice for every 2 cups of water) Add the brocolli to the rice BEFORE it boils, so that it's thoroghly cooked together. Let boil, and then turn down to simmer until the rice is done. If you'd like it a bit cheesy, try adding some grated cheese to the rice after the water is boiled out.
Enjoy!

Mine uses potatoes but its a starch so it will give you the same effect as the rice
Ingredients:
2 boneless, skinless chicken breasts cut into bite size pieces
½ tsp. salt
½ cup water
1 pkg. (12) oz. Frozen broccoli florets
4 cups frozen hash brown potatoes cubed
½ lb. (8) oz. Velveeta cheese cubed
1 can cream of celery soup
¼ tsp. ground nutmeg
Directions:
-Spray large skillet with cooking spray
-Add chicken, cook on med high heat until no longer pink, season with S&P
-Add water, broccoli and potatoes and stir
-Cover and cook for 5-7 minutes until potatoes are tender
-Stir in remaining ingredients and cook until Velveeta cheese is completely melted
You can eat this as is or you could even put it in a casserole dish and top with breadcrumbs or something and broil it till top is golden brown and bubbly!
