2. second half of cooking 375 degrees
3. Do Not Open Oven
4. Works better in a casserole dish rather than muffin tins
5. Let the batter rest for an hour before baking
6. USE BREAD FLOUR NOT SELF RISING OR ALL PURPOSE
7. Heat pan and oil or drippings hot enough for the batter to sizzle when poured
8. Your milk and eggs need to be room temperature
9. Make two batches of batter in case the first one doesnt rise well.
10. Dont over mix
11. remove it from the pan quickly or it get soggy

Use approx 6 level tablespoons of flour, two eggs and a little cold water.and half a cup of milk, salt to taste. Beat it as long as you possibly can to get the air into it. Put it in the fridge for a while to rest. Heat your oil in your tins till very hot pour in your mixture and there you go perfect yorkshires.

It is difficult to give exact amounts but the key is to use 2 eggs and use half milk and water to make the batter. The batter should be the consistency of single cream , Never use self raising flour. Always use very hot fat and bake in a very hot oven.
