I go to the deli and get some thin sliced, or shaved, roast beef. It is very tender. If you need it cooked a bit more, or just warmed up, dredge it in hot beef stock. Yummy, and easy

My favorite steak is skirt steak which is the diaphragm muscle. You can pan broil, grill, or oven broil (just know it does cook quickly). It's tender, juicy, and flavorful. It also works well for fajitas. You may have a difficult time finding it this time of year, as it is much more popular in the summer, but I've still been able to find it.
For the philly cheese steak, I would rub it with garlic and onion powder, and a bit of salt and pepper, and cook to desired doneness.
It is on the pricey side, but still less expensive than a filet or beef tenderloin tips.
Always remember when cooking meat, cook it at room temperature, and let the meat sit 5-10 minutes (5 is probably sufficient for skirt steak as it isn't excessively thick) after cooking so the meat retains its juices.
The best thing about skirt steak, is even if you cook it well done, it's still juicy. It doesn't dry out like other steaks. Enjoy!!

Check out cooksillustrated.com. They just posted a recipe for philly cheese steaks. They use a lesser cut, pounded thin. CI tests several different recipes and methods for all of their articles and choose one that their staff and tasters like best. Sort of a scientific method of cooking.

I make a great philly cheese steak- i use chuck, its a decent cut of meat thats fairly inexpensive . I get it and have the butcher cut it really thin then season with garlic powder, lawrys salt and pepper- fry it up real fast till browned and serve it on sub rolls (pan toasted with butter) with mozzerella cheese, onions and bell peppers sauteed YUM!! My hubby LOVES em!

Sirloin strips or tenders, but be cautious of the pills you choose, it's recently been reported that various pills have been tainted with minute metal shavings...

filet mignon. i made steak filets for dinner one night and used the a couple filets i had left over the next day for philly cheez steaks...mm mm good
