1) a good cornbread- use a store bought mix such as marie calanders or the little inexpensive box by jiffy which works just fine. Add 1/2 can creamed corn in mix w/slighty less water than called for. A great cornbread.
2) Sweet potatoes fit great w / jambalaya. fresh baked preferred served with butter, brown sugar, and pepper. Not a big potatoe as the jambalaya is main dish. this complements flavor very well . i often sprinkle a little brown sugar and pepper on top of mine for an added flavor and texture. it caramelizes a bit and would work fine with your main dish.
3)Vegi- frozen bag of 'peas with pearl onions'. the flavor is not too strong and will complement a jambalaya by flavor and looks nice on plate
3) Dessert- something not to strong flavored...mild yet tasty. possible a small bowl of ice cream such as pistaschio and choclate with an added twist of a slice of fresh cantalope (rind off) or bananna in the side of bowl.... or just a few flavors of ice cream without the fruit by themself. Chocolate drizzle optional.

some serve Jambalaya as the side dish but I eat it as the main meal and serve it with a fresh garden salad and bread. I wouldn't serve it with rice since it's made with rice.

Jambalaya is one of those one skillet meals that has so much in it that you dont need a side dish per se. you can serve warm crusty bread or a salad with it though.

Classic Caesar Salad
Ingredients:
¼ cup olive oil
1 tbls. Fresh lemon juice
½ tsp. what’s-this-here sauce
1 clove garlic, minced
1 cup croutons
¼ tsp. ground black pepper
2-3 romaine hearts
*1 tbls. Chopped anchovy fillets
Mix all together and toss until romaine leaves are well coated. You can chop the lettuce with a metal knife only if you are planning to serve it immediately or else the leaves will begin to turn brown.

Well, Jambalaya kinda is everything in itself, try a really good crusty bread with vegetable cabobs- like bell peppers onions cherry tomatos and inch thick cut ears of corn- that would be great
