If you're talking strictly vegetables, then it's more difficult unless you find a way to add fat with butter, oil or cheese.
I hope for your health's sake you're talking about healthy veggies, not potatoes and corn.
Many vegetarians are overweight, but that's because they eat too much non-animal junk food like Hostess pies.

Beans, bean soup for the protein, and Rebecca is also right, avocados. Good luck I have the same problem. People don't hesitate to tell someone they are skinny, not realizing that it hurts them just as much as if they walk up to an overweight person and tell them that they are fat. The FDA approves additives and perservatives, hormones & all kinds of poisons be added to our food. If we could eat all natural, weight would not be a problem for any of us. Just balance your diet with lots of good, healthy food. Good luck to both of us and everyone with a weight problem!

Exercise stimulates metabolism. If you know "suryanamaskar" excellent. otherwise balance your exercise and make sure each muscle is gets its share.
Balanced diet is important for proper digestion and building your lean muscle. Vegetables that are various deep colors (green, yellow, red and so on) are excellent for minerals and vitamines. Use lintels, gerbazo beans, cheese, curds and 2% milk for protein. Use rice sparingly for carbohydrates.
Good luck.

Avocados are wonderful fat-bearing fruit. If you eat lots of them, I'm sure you will gain weight. Talking to a doctor may be more helpful to your health, however...

wish i had your problem.. most people want to get thin.
I'm not sure if you can get fat by only eating veggies, you can just drink less water and sit on the couch more..
because the less you excersise the fatter you get.
