Gypsy Tart
Serves 6
1 400g (14oz) Tin of Evaporated Milk
340g (12oz) Dark Muscovado Sugar
1 10inch Pre-baked shortcrust pastry case

Pre-heat oven to 200°C: 400°F: Gas 6.
Whisk evaporated milk and sugar together for approximately 10 minutes
Until light and fluffy and coffee coloured.
Pour the mix into the pastry case.
Bake for 10 minutes.
The surface will appear slightly sticky but will set completely when left to cool.
Serve cold.

My mum makes wicked Gypsy Tart and I wish she was here with the recipe. I know its only two ingredients, Evaporated Milk and Dark Muscavado Sugar, whisk it up and put in a pre baked shortcrust pastry case. Sorry got no measurements which isn't an answer at all really is it? Sorry!

Gypsy Tart - Mum's recipe
14oz tin evaporated milk
12oz dark Muscovado sugar
10'' ready baked pastry case.

PREHEAT OVEN 200C
Whisk evap. milk and sugar for 10 minutes till light and fluffy and coffee coloured. Pour into pastry case and cook for 10 minutes. The top will look a bit sticky but it will set when cold. Eat cold a.s.a.p.
