I know one recipe with ground meat but i dont want that. anything with cheese?

Spinach and Ricotta Cannelloni
125 g cannelloni tubes, shells (or you can use fresh lasagne sheets)
1 bunch spinach (or 1 box of frozen spinach)
250 g ricotta cheese
1/2 cup of grated cheese
1/4 cup of grated parmesan cheese
2 egg yolks
salt and pepper
1 pinch nutmeg
700 g pasta sauce (or you can make your own)
1/2 cup extra grated cheese (for sprinkling on top)
Pre-heat oven to 190 degrees. Boil spinach for a couple of minutes, drain and finely chop. In a bowl mix ricotta, grated cheese, parmesan cheese, egg yolks, salt, pepper and nutmeg and spinach. Stuff mixture into cannelloni shells. Lay shells out in lasagne dish in one layer. Top with tomato pasta sauce.Sprinkle with cheese. Bake in oven for 45-50 minutes or until pasta is cooked (test with a knife) and cheese is golden on top.Serve with hot Italian bread, salad and wine. Good to freeze- to reheat, put in oven at 190 degrees celcius covered with foil for an hour. take foil off and leave unill cheese is nice and melted on-top.

I'm taking a chance here, because it's not really your noodles. I know you asked for no meat, but this has a LOT of cheese...
"Manicotti with Spicy Sausage" - 8 to 10 servings
1 lb. bulk spicy Italian sausage
1 (28 oz.) can crushed tomatoes
1 (26 oz.) jar marinara sauce
2 eggs; beaten
3 cups ricotta cheese
3/4 cup grated Parmesan cheese
1 (4 oz.) can chopped green chiles
3 tbsp. minced fresh parsley
1 tsp. Italian seasoning
1/2 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. pepper
18 uncooked manicotti shells
1/2 cup shredded mozzarella cheese
In a large skillet, cook sausage over medium heat until no longer pink; drain and set aside. In same skillet, bring tomatoes and marinara sauce to a boil. Reduce heat; cover and simmer 10 minutes. In a large bowl, combine the eggs, ricotta, Parmesan, chiles, parsley, Italian seasoning, salt, garlic powder and pepper.
Divide 2 cups of sauce between two greased 13x9x2" baking dishes. Stuff uncooked manicotti shells with cheese mixture; place in prepared pans. Sprinkle with sausage; top with remaining sauce.
Cover and bake at 375* - 50 minutes. Uncover; sprinkle with mozzarella cheese. Bake 10 minutes longer or until cheese is melted and manicotti is tender. Let stand 5 minutes before serving.

Cannelloni Recipe
In this cannelloni recipe, pasta shells are stuffed with a mixture of ground beef, garlic, spinach, and cheese.
Serving Size : 6
12 cannelloni shells
3 (8-ounce) cans tomato sauce
2 tablespoons grated Parmesan cheese
1 pound ground beef
1/4 cup chopped onion
1 clove garlic -- minced
1 (10 ounces) Package frozen chopped spinach -- thawed and well drained
1/3 cup grated Parmesan cheese
2 tablespoons milk
2 eggs -- slightly beaten
1/2 teaspoon dried leaf oregano, crumbled
1/4 cup Butter or margarine
1/4 cup plus 2 tablespoons all-purpose flour
2 cups half-and-half
1/8 teaspoon white pepper
Cook cannelloni according to package directions; drain and set aside.Combine tomato sauce and 2 tablespoons Parmesan cheese; spread 1 cup tomato mixture in a lightly greased 13- x 9- x 2-inch baking dish; set aside dish and remaining sauce.Cook beef, onion, and garlic in a large skillet until beef is browned, stirring to crumble meat; drain well. Add spinach; saute 3 minutes. Add 1/3 cup Parmesan cheese, milk, eggs, and oregano; stir well. Stuff cannelloni shells with beef mixture. Place filled cannelloni on tomato mixture in baking dish; set aside.Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add half-and-half; cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
Stir in pepper. Pour over cannelloni; spoon remaining tomato mixture over cream sauce. Bake, uncovered, at 375 degrees for 20 minutes. Yield: 6 servings.

go to www.epicurious.com and type in canneloni in the search component. you'll get a bunch of good recipes and you'll get the cooks comments as to what they added or subsituted to make it even better. it's a great site and i use it every day. you won't be dissapointed.
