screw the traditional stuff these days, get them something that they will actually use. A gift certificate for a nice restaurant or something that they can do together and will actually use.

Do you have some photos of them at their wedding? You can get all sorts of things made incorporating the photo(s). Paper is the symbol of the first wedding anniversary so perhaps get them a basket of paper products: fancy napkins, paper plates, paper table cloth, and a picnic.
