I'm no Miss Manners, but I think it's bizarre that this crock pot has been passed through so many hands in you family. And that everyone knows about it.... I may be wrong, but I think most people re-gift to people who don;t know each other.
Anyhow, the thank-you note:
Many thanks for thinking of us on our wedding day.
No need to mention that you returned it.
Best wishes in your marriage.

Tell her that you loved the crock pot...she doesnt have to know that you returned it...and unless you tell her, she won't know that someone else gave you a better one. If she ever sees you using the one you got, just tell her that the one she gave you broke.

Just thank her for the crockpot since that was her "gift" (so to speak). She doesn't need to know you returned it. Then, take revenge come Christmas! :-)

You DON'T let them know you returned it, or that you know it was a re-gift. Just remark that it was a thoughtful and useful gift, return it discreetly, and move on.

You never say anything negative, rather thank you for coming & bringing such a wonderfull gift. Thats it, focus the note on her presence & not on the gift

Obviously, don't mention the fact that you returned it. Just a simple "thank you for your thoughtfulness" Maybe add something like, "I'm looking forward to making lots of great meals..."

Just say thanks for the crock pot, we ended up getting another so we exchanged it for a new microwave or toaster oven or whatever. Say how it will make breakfast time much quicker for you and you two should get together one morning for breakfast and coffee. I think that sounds nice, it makes it not so bad that u returned her gift.

I am so big on etiquette, but I just couldn't respond politely if someone did that to me. She had to know you would find out.
Wait, are you sure it is the same one? Maybe she liked it so much she got you one just like it.
I don't know; maybe just thank her for her presence and don't make any reference to the gift.

NEVER say or imply that the gift will be returned, even if you got seven coffee makers.
