Before asking about visas you really should give your nationality. Here is the visa section of the PRC embassy in Washington DC.

In Hong Kong there are plenty of places that offer visas. The best thing is to do it at a well known hotel, such as the Holiday Inn. It's more expensive, but rest assured they'll get you your visa. You could probably still get same-day service on a 6 month multiple entry visa. Holiday Inn has the clout. So forget detail and make it simple. And, if you happen to be in the USA, Canada or some other English speaking country, I wouldn't want to go to the Chinese Embassy (or any embassy). Rules are always changing and you might even have a hard time getting a highly restricted visa.
